Ylice is the wine with which we wanted to capture and enhance the value and typicality of the “La Spina” vineyard; a Verdicchio vineyard located on sandy soil that rises close to a luxuriant forest of English oaks, in effect a small “Cru” within the Verdicchio Classico cultivation area. Taking care of the vines in full respect of the territory, carefully checking every single intervention and working with passion in the cellar allows us to offer you a unique wine, made of great freshness, excellent drinkability and innate elegance.

Processing method

Harvest: manual in bins.
Pressing: soft pressing of the grapes with selection of the must.
Pre-fermentation operations: processing in reduction.
Extra pre-fermentation operations: a small percentage of the grapes undergoes a cold skin maceration.
Alcoholic Fermentation: in steel tanks, at a controlled temperature between 14/16 ° C for a period of 10/12 days.
Malo-lactic fermentation: not carried out.
Aging: in steel tanks with frequent batonnage for a period of 6/8 months.
Bottling: in the summer following the harvest.
Post-bottling refinement: the bottles are stored for 3/4 months before being released for consumption.
