The main vineyard that gives the Podere its name is characterized by three fundamental elements: the elevation between 110 and 125 meters above sea level, the hilly inclination and the rich presence of stone to make the clay more friable and permeable. Its name "Selva Capuzza" finds in this reference (Capuzza: Cappuccio) the indication of its particular position.
The grapes are harvested by hand in 20 kg crates and taken to the cellar, where they are soft pressed. The must is then cooled and clarified with the utmost care to then start the alcoholic fermentation with selected yeasts. All the vinification takes place in steel tanks to protect and enhance the typical characteristics of the grape, known for its austerity. bottle at the arrival of the spring season and then refine several months in the cellar, where it waits to reach the balance in which the vine mitigates its exuberance and achieves that balance between flavor and freshness.
