Molceo is the complexity of Lugana di Ottella. The superior refinement embellishes it with the development of time, capable of enhancing the most mysterious and intriguing character of Trebbiano di Lugana. Entirely composed of Trebbiano di Lugana, this white is vinified in steel tanks, and then rests on its own fine lees at the end of the malolactic fermentation for a period of 16 months, partly in steel and partly in barrique. Its complex scent opens like a fan a bouquet of white flowers, exotic fruit and candied citrus peel. The body is as soft as it is fresh, balanced in a fine and chiseled balance
Processing method
Delicate and soft pressing of whole bunches for most of the production, the rest with light destemming by oscillation. Following a rigorous vinification protocol: partial malolactic fermentation, aging 16 months on yeasts and fine lees, which takes place for the most part in steel and the remainder in tonneaux and barriques
