Since 1979 the harmonious harmony of our Chardonnay, Pinot Bianco and Pinot Nero grapes at each harvest recreates the assembly that represents the foundations of our style. After 24 months on the lees, the Brut reaches its balance and is ready to be disgorged. The white gold glass has a subtle and velvety perlage. The fine aromatic profile of the floral notes of elderberry and hawthorn gives delicate nuances to the freshness of the fruit, between Mediterranean citrus and white and yellow fruit, with notes of aromatic herbs and almonds. The sip has joyful proportions of freshness and fruit with a persistent finish, which tends to be refined and harmonious
In white, in pneumatic press with separation of I and II squeezing. After 12 hours of decantation at 15 ° C, inoculation of selected yeasts for fermentation partly in stainless steel tanks at a controlled temperature and partly in small oak barrels (30%). Malolactic fermentation and racking precede the assembly of the Cuvée which in spring, added the “tirage syrup”, is bottled, capped with the crown cap and laid down in stacks for the second fermentation. MATURATION AND AGING: The stacked bottles remain at least 24 months in the rooms of our cellars before the "remuage". Subsequently opened and dosed "Brut" they receive the mushroom cap and the cage. Finally, at least two months of further refinement is necessary before placing this Franciacorta on the market.
