The Chardonnay grapes, coming from the most highly suited areas of Vallagariana, are still hand-harvested today and reach the Rovereto Winery in the short space of a few hours, to be immediately sent to soft pressing and the first fermentation in steel, at a controlled temperature. The best selected yeasts are used, together with first choice cane sugar, to generate the magic of refermentation in the bottle according to the classic method.
The grapes are harvested by hand and in boxes, to preserve the quality and integrity of the grape. In the cellar they are de-stemmed and softly pressed to obtain a base wine which will then be bottled and will carry out, according to the principles established by the classic or champenoise method and thanks to specific yeasts, a refermentation in the bottle, responsible for the formation of the typical bubbles (taking of foam).
