The Valpolicella Classico is the simplest wine with which the Speri winery tells us about the different facets of the Valpolicella terroir. In fact, in this label the fresh and light sensations dominate both on the nose and on the palate, enhanced by the choice made during the vinification and aging phase, where one opts only for steel and vitrified concrete, leaving the wood aside.
Processing method
Manual harvesting of the bunches, immediate pressing with a crusher-destemmer, fermentation with maceration for 8 days at a controlled temperature of 20-24 degrees in temperature-controlled stainless steel tanks with scheduled daily pumping over. Transfer to vitrified concrete vats for the completion of the alcoholic and malolactic fermentation. Filtration and bottling in February
