It is the least ambitious wine of the legendary Bolgheri winery, the Toscana IGT “Le Difese”. However, this blend of Cabernet Sauvignon and Sangiovese has proven over the years to be a great red wine, sensational for its reliability and consistency in quality. A bottle capable of perfectly telling both the vintage and the territory in which it is produced and exalting itself at the table.
Careful selection and selection of the bunches by hand. Soft pressing and de-stemming of the grapes. Primary fermentation in stainless steel vats at a controlled temperature (29-30 degrees) without adding external yeasts. Maceration on the skins for 12-15 days for the Cabernet Sauvignon and for about 15-18 days for the Sangiovese, with subsequent stages of pumping over and deléstage to soften and refine the tannins. Malolactic fermentation carried out in steel and ended in mid-November.
