The harvest of the Merlot grapes began with an average delay of about 10 days compared to the previous vintages, while the Cabernet Sauvignon grapes were harvested starting from the second decade of September and ending in the first days of October. The weather conditions strongly characterized the vintage giving rise to healthy grapes, with an excellent aromatic component but with a lower sugar content than the norm of recent years. Healthy, crunchy and well-ripened grapes arrived in the cellar giving rise to balanced musts, with a low alcohol content and sweet and velvety tannins. The freshness of the wine given by the good acidity and the right PH ratio, a lower alcohol content but at the same time a very evident structure are the characteristics that distinguish this 2018 vintage.
Sorting and careful selection of bunches and berries by hand, by means of a sorting table. Soft pressing and de-stemming of the bunches to avoid the breaking of the berries and excessive release of tannins. Alcoholic fermentation in stainless steel vats at a controlled temperature maintained around 26-28 ° C, without any addition of external yeasts.
