The Vin Santo Occhi di Pernice produced in the Tuscan territories by the Boscarelli Winery. The must obtained from the pressing of naturally dried Malvasia, Grechetto and Trebbiano grapes. The Vin Santo Toscano belongs to the most ancient tradition. It is the wine of welcome and of being together.
The juice obtained from the pressing of mainly Sangiovese grapes and other complementary red berried grapes, naturally dried, is fermented in kegs of different woods, and of variable capacity between 20 and 50 liters, sealed with sealing wax.
The must, thanks to the presence of selected yeasts from production to production, ferments in an oxygen-free environment. The first opening of the kegs takes place after about 4/5 years.
In seasoning, according to tradition, thermal changes are important.
