The particular exposure of Villa Poggio Salvi allows the obtaining of a Brunello of great value and finesse, starting from Sangiovese grapes harvested by hand with scrupulous attention. Of great importance is the fact that the wine-making cellar is located adjacent to the vineyards; this allows a short time to elapse between harvesting and crushing, avoiding any unwanted fermentation starts and problems of breaking the berries due to transport. The main characteristics, namely the particular intensity in the aromas, the readiness and harmonious roundness in the tannins and the length in the aftertaste, are the result of the very particular pedoclimatic situation of the vineyards from which it comes.
Processing method
Fermentation and maceration in temperature-controlled steel tanks at 28-30 ° C for 12-14 days, fulling of the cap with an automatic piston system. 30 months in 30-60-100hl Slavonian oak barrels. Refinement in the bottle: at least 4 months.
