“Sarpa” in the Venetian dialect means “marc”, which is the raw material from which grappa is made. “Sarpa di Poli” is made with grape pomace that has floral and delicately herbaceous aromas, steam distilled in a discontinuous cycle in small copper boilers. It contains the most ancient traditions without having the defects of the grappas of the past, which often appeared pungent, aggressive and oily. The Grappa di Merlot and Cabernet “Sarpa di Poli” by Jacopo Poli is produced with merlot and cabernet pomace from the Veneto area; it is straightforward, simple, authentic and natural.
