1701 is the first biodynamic winery in Franciacorta: it produces sparkling wines and still wines inspired by the principles of a clean and respectful agriculture of the territory and a production philosophy that recovers the most virtuous and traditional traditions, with the aim of expressing the terroir and nature without tricks or artifices.

The approach in the vineyard involves the exclusive use of biodynamic preparations and attention to the phases of the moon, without synthetic chemistry. In the cellar the grapes, rigorously harvested by hand, are subjected to soft pressing and vinification in steel tanks, facilitated by a pied de cuve with indigenous yeasts.

During the bottling phase, a liquer de tirage made up of must is used and the refermentation in the bottle is never less than 30 months on the lees.
